“Roadkill” Soup

Recipe submitted by Nicholas F. of Encinitas, CA, for the 2009 Mambolicious Recipe Contest.

Chef’s Note: This recipe was created by my son when he was about 7. It is totally his own creation.

Ingredients:

  • Lightlife’s Gimme Lean “Beef” – 1 lb. (or meat)
  • 1 carton tomato/roasted red pepper soup (”blood”)
  • 1 carton sliced mushrooms and
  • 1 chopped onion (skin and bones)
  • 1 can drained black-eyed peas (eyeballs)
  • A few sprigs of fresh thyme
  • Salt and pepper to taste
Directions:
  1. Brown “beef” with onions and mushrooms – season to taste w/ salt and pepper.
  2. Mix together with thyme, soup and peas.
  3. Heat through.
