Cold Summer Squash Soup with Yogurt

Recipe submitted by Roberta S. of Chicago, IL, for the 2009 Mambolicious Recipe Contest.

Ingredients:

  • 1 cup plain Brown Cow Cream
  • 1 cup cold water
  • 1/2 tsp. Nutmeg
  • 2 medium summer squash

Directions:

  1. Blend Brown Cow Cream and water well.
  2. Mix in nutmeg.
  3. Peel and dice squash into small bits.
  4. Add squash to liquid. Chill for two hours.
Servings: 4
